Muay Thai
A playful twist on a great Trader Vics Tiki classic.
30ml Lemongrass infused Havana Club Añejo blanco
30ml Pussers Navy rum
1 Barspoon Cointreau
30ml Fresh lime juice
30ml Orgeat syrup
2 small slices of fresh chilli
A few drops of orange bitters
Shake with chilli, serve over crushed ice.
Zombie
The original Don the Beachcomber Tiki classic.
30ml fresh Pineapple juice
30ml fresh Lemon juice
30ml fresh Lime juice
30ml Passionfruit syrup
30ml Havana Club añejo blanco
30ml Brugal añejo
30ml Pussers navy rum
dash Angostura bitters
Shake and serve tall over ice.
Blueberry Manhattan
An accessible twist on this fantastic Prohibition era drink.
40ml Woodford Reserve Bourbon
20ml Rosso Vermouth
1 Barspoon Grand Marnier
30ml House made Blueberry jam
1dash Angostura Bitters
Shake and strain into a chilled Martini glass.

40ml London Dry Gin (I like Tanqueray)
40ml Rosso Vermouth
2 dashes Fernet Branca
Oak
After Ageing the drink in a former Sherry barrel for at least 1 month (adding further depth, complexity & flavour to the drink), we stir it down with ice and strain into a chilled martini glass with some Orange peel squeezed over the top.
