This is the problem- we ALL drink wine these days. \u00a0At home, in restaurants, with friends. But do we\u00a0actually know what we are drinking, let alone like it? \u00a0We all want to know more, but haven\u2019t got the time to\u00a0learn and we certainly don\u2019t want read a wine column\u00a0where some prehistoric chap is telling us what to\u00a0uncork with our Sunday roast.<\/p>\n

Every month I\u2019ll be here shedding some\u00a0light on what people perceive to be the\u00a0scary world of wine! You can learn about\u00a0grape varieties, and discover your very own\u00a0palate through choosing and tasting based\u00a0upon your new-found knowledge. My\u00a0aim within a few months is to give you the\u00a0confidence to decide what you like, what you want to drink\u00a0and how much you want to spend. You will be ripping that\u00a0wine list off your partner to choose that perfect wine for\u00a0dinner and you won\u2019t be wandering around the wine aisle\u00a0like a headless chicken anymore!<\/p>\n

Also, each month I will be recommending a wine to\u00a0complement our Marbella Rocks \u2018Chill In\u2019 recipe. Wine and\u00a0Food matching is a speciality of mine, and it really is a great\u00a0way to understand why and how we can complement a\u00a0meal with our chosen wine.<\/p>\n

Food and wine matching is great fun! There are general\u00a0rules, but a good tip to remember if you get stuck choosing,\u00a0is that wines were originally made locally to reflect their\u00a0particular region\u2019s\/country\u2019s cuisine. The food\u2019s provenance\u00a0will match with the wines of the land. So, choose a wine\u00a0to complement the dish\u2019s origin e.g. full bodied, highly\u00a0tannic Spanish Rioja with their inland, rustic cuisine of\u00a0stews. Another example is high acid red wines e.g. Chianti,\u00a0which matches perfectly with high acid, tomato-based\u00a0Italian foods, such as Bolognese. Also cooking methods can\u00a0influence the best style of wine to choose. So with steamed\u00a0food, you should try and drink a lighter wine, otherwise the\u00a0delicacy of the food will be destroyed.<\/p>\n

General food and wine matching rules are to match sweet\u00a0wine with sweet food, acidic wine with acidic or salty food,\u00a0spicy wine with spicy food, red wine with red meat and\u00a0white wine with white, although this traditional rule can\u00a0often be relaxed.
